The origin of the word ‘pig’ in this context is from medievel scottish and northern English meaning small pail or pot. Usually eathernware. My salt pigs are glazed and stoneware, robust enough to withstand the most enthusiastic chefs. They don’t even have to hold salt. Any herb or seasoning you need to hand when you’re cooking will do.
